Green Chile Burgers

2 anaheim chiles
4 sesame seed buns
4 slices of provolone cheese
1.32 lbs 82% lean ground beef formed into 4 patties, with a small indentation in the middle of each patty
kosher salt
garlic powder
onion powder
fresh black pepper
The Procedure:
- Season the patties with salt, pepper, onion powder, and garlic powder to taste.
- Brush the green chiles with olive oil and grill over high heat until the chiles are completely roasted. Put the chiles in a brown bag for 20 minutes. Then peel off the skins, deseed, (partially) devein, apply a rough chop, add salt, and place in a pan with a little olive oil. At the grill, turn on three burners (again, high heat) and place the pan above the first burner.
- On the other two burners, grill the beef patties for about 8 minutes or until the internal temperature reaches 160°F-165°F. Transfer the patties to a clean plate and allow them to rest for 5 minutes.
- Toast the sesame buns. Assemble your burger. When the patties are done resting, eat up!
