So in between Christmas shopping and discussions on the potency of Maui Wowie (the catnip, not the pot, you delinquents), I’ve been busy in the kitchen. Unfortunately, as soon as I finish one project in the kitchen, I have an article to write plus another project. So my pile of things-to-do just increases. To avoid the long delay between articles, I’ve split up Christmas Preparations: Part I into two parts. This segment is purely about cookies. And baking. And goat blood. Okay, maybe not that last one, but you get the point.

Chili is a dish made from chiles that is wonderful to eat when you are chilly.

Many Chili Red Chile

Chili is one of those dishes that nobody ever agrees on how to cook, so if you’ve ever cooked chili before you are guaranteed to hate this post and be very angry at me for all the mortal sins against southwestern gastronomy that I surely have committed in your eyes.

The reason nobody agrees how to cook it is because it is a dish of low origins. Originally, chili was a Mexican stew made from whatever meat was available, and heavily spiced with local hot chiles to hide the taste of the often spoiled meat. These days, thanks to the wonders of refrigeration, we no longer have to worry about covering up rancid flavors, but the spiciness of the chile peppers is still something that can be appreciated on its own merits.

Week 2 is already finished, and my plans are on schedule. Among other culinary trips (see the new beef stroganoff and updates to cranberry orange bread), this week’s accomplishments include smoked ham-vegetable stock, peanut butter milk chocolate bark, candied orange zest, dark chocolate bark with said zest, potato rosemary rolls with roasted garlic, brown roux, and a test run on roasted chestnuts.

Unless a blog is dedicated to baking, I frown on attention-starved cooking blogs with a page full of dessert close-up photography. I also frown on most cakes. I usually can’t bring myself to enjoy eating a frosting-covered mound of flour, even to be polite. Other sweets like apple pie à la mode and oatmeal raisin cookies are more tempting, but I can pass them up without much suffering. But chocolate—well, that’s my weakness. I love chocolate, especially 70%-75% dark chocolate. (Milk chocolate is for wusses.) Pair the flavor of pure chocolate with espresso and a dash of salt, and you may as well pry the dessert from the hands of my stiff corpse.

Gale Grand has a decadent recipe for Peanut Butter Pie. I made 1.5x the original recipe for both the filling and the crust, but added my own twist with a thin layer of ganache—and not just any ganache either, but a dark chocolate espresso ganache. The flavor was spectacular! The nutty crust and intense chocolate-espresso were the perfect complements to the creamy peanut-butter filling.

For an interesting variation, try Chocolate Peanut Butter Cheesecake or Chocolate Espresso Peanut Butter Bars, the latter with a cream-free peanut butter spread similar to Alton Brown’s peanut butter pie filling.

The Crust

The crust tastes similar to nutter butter, but with a crunchier crumbly texture and better flavor. Perfect. Chocolate lovers: resist the urge to replace the graham crackers with a chocolate crumb. The chocolate will come later and in style.
